VEG FRIED RICE
Veg fried rice is a popular Chinese Indian dish which is now available in every corner of the world.In India its available as a fast food and children love this rice.. with the vegetables its very healthy and nutritious too.. its very simple to make, the only thing which is the concern is the chopping of veggies in the same size which is little bit time consuming.. i have made this dish in restaurant style and it tastes the same.. The secret lies in choosing the correct vegetables and the basmati rice which you use.so lets see what we need and how to make it with step by step images to guide you.
INGREDIENTS
Basmati rice - 2 cups ( soak it for 30 mins)
Carrot - 50g
Beans - 50g
Green peas (fresh) - 50g
Sweet corn - 100g ( as kids love this we add it more )
Green capsicum - 50g
Spring onions - 50g
Ginger garlic paste - 1tbsp
Big onion - 2 nos
Green chilly - 2 nos
Soy sauce - 2 tsp
Black pepper powder - 1 - 2 tsp
Oil - 5 tbsp
Salt - as required
Water - 3 cups ( use the same cup u used for measuring rice )
I like to add some details about the amount of water we have to use for basmati rice which is apt for all the recipes which uses basmati rice .. the rice,water ratio is 1 = 1. 5 .. this is standard .. for 1 cup of rice u have to add 1.5 cup of water. this suits briyani, pulao also.
In a pressure cooker, add the soaked 2 cups of basmati rice and 3 cups of water ,5 ml of cooking oil and cook in high flame for 2 whistles and simmer for 3 minutes and switch of the stove. the oil gives us a non sticky nature to the rice after its cooked. let the steam get released , open the lid and spread the rice in a plate and let it cool.
Chop all the vegetables in even cubes as shown in the picture.it should be small enough as we won't close and cook..
Place a kadai on the stove, pour the oil and let it get heated. Add ginger garlic paste and sauté it for 2 mins and add onions and green chilly and saute for another 2 mins.
Add in the chopped vegetables ( leave capsicum and spring onions we will add it later ) and cook in high flame for 5 mins, stirring now and then..
Add soy sauce and cook for another 2 mins, add in the capsicum and mix well.
Add required salt and black pepper powder and give it a good mix..Add in the cooked rice now and mix it gently without the grains getting broken.
Add the spring onions , check salt and mix it gently one more time and cover the kadai with a lid and simmer for 2 to 3 mins.
Thats it your fried rice is ready to eat.. have it with some chinese gravy or tomato sauce ..
