ARISI PARUPPU SADHAM (ARISIMPARUPPU)
Arisi paruppu sadham which is colloquially called as arisimparuppu in kongu nadu region is very famous for its simplicity, great taste and rich in nutrients.. its a comfort food, very easy to make literally in 10 mins and it makes you feel fuller and it suits all age groups from children to elders. Its minimal ingredients provide us cushion to make it any time.. I have shared this recipe with many of my friends and they all liked it very much.
Here i have used toor dhal (thuvaram paruppu) , but you can use green gram dhal, moong dhal, urad dhal with skin , red beans (thatta payaru).. Only if you are using thatta payaru it has to be soaked as well with rice for 30 mins.. the other dals no need to be soaked ..In earlier days they used to cook in open pans ,its time consuming but now we can make it quick in the pressure cooker ..
INGREDIENTS
Boiled rice - 2 cups (soak for minimum 30 mins)
Toor dal - 1/2 cup
Small onions - 100g
Dry red chilles - 5 nos
Curry leaves - few
Tomatoes - 4 large ( the general messurement is 2 large tomatoes for 1 cup rice)
Turmeric powder - 1/2 tsp
Oil - 3 tbsp
Mustard seeds - 1/2 tsp
Asafoetida ( perungayam ) - 1/2 tsp
Salt - as required
Water - 6 cups ( 1 cup boiled rice = 3 cups of water, this is enough to cook the dal also no need to add water separately for dal)
TO GRIND INTO A COARSE PASTE:
Garlic - 15 to 20 pods
cumin seeds ( jeeraham)- 1 tsp
Black pepper - 1 tsp
Grind these three ingredients in a mixer to a coarse paste
METHOD
Place a pressure pan on the stove, heat it, pour in the oil, let it get heated, add asafoetida and mustard seeds, wait for it to splutter..
Add small onions, dry red chillies and curry leaves and saute it for 2 mins ..
Add in the chopped tomatoes, salt and turmeric powder , saute it and cook it closed for 2 mins.. U can see the tomatoes fully cooked and got mushy and oil separates from the mixture..
Add 6 cups of water, ( use the same cup you used to measure rice) bring it to boil, check salt and adjust it.. Add the soaked rice and dal and let it boil for 2 mins, stir it occasionally ..
Add the ground masala ( garlic, cumin and pepper ) mix it well
close the lid and pressure cook for 3 whistles in high flame and simmer for 2 mins and switch off the stove..
Let the steam get released by itself, open the lid and mix it gently with a wooden spoon ..
Thats it your arisi paruppu sadham is ready to serve .. We can have it as such with a pickle or vadaham, we can have it with curd it tastes divine .. For non vegetarians have it with some scrammbled eggs it tastes wonderful..
