TOMATO EGG BHURJI - MUTTAI THAKKALI

Egg bhurji is a most popular mumbai street food.. It is different from scrambled eggs or fried eggs as we retain the moisture of eggs in bhurji , not completely drying it.. this is due to the addition of tomatoes which gives the eggs the desired moisture.. It can be made both spicy and non-spicy depending upon the amount of masalas we add.. I like to add an important information about eggs that is the yolk (manjal karu) of an egg contains 300mg of cholesterol so, those who have a higher cholesterol levels, try to use only the egg whites.. its full of protein and only 15 calories.. Average an adult can have 2 egg whites per day, children 4 egg whites.. these information i got it from a dietician at a hospital.. so friends those who have eggs once in a week can have the whole egg but those who eat daily try to use only the egg whites. I have made this bhurji with whole eggs, but it can be made with egg whites alone too, procedure the same.. The garlic we add in this recipe acts as the nature cholesterol fighter..

INGREDIENTS

Eggs - 6 nos ( crack the eggs into a bowl and whisk it nicely)
Big onions - 3 nos ( thinly sliced)
Green chillies - 4 nos ( slit into two halves)
Garlic - 20 cloves (crushed)
Tomato - 3 large ( chopped)
Chicken masala - 3 tsp ( i used sakthi chicken masala, but you can use any brand the flavour just changes a bit nothing much)
Turmeric powder - 1/4 tsp
 Salt - as required
Oil - 3 tbsp
Mustard seeds - 1/2 tsp
Curry leaves - few
Coriander leaves - for garnishing






METHOD 

Heat a pan or kadai on the stove, add oil, heat it , add mustard seeds, let it splutter, add in thinly sliced onions,green chillies, crushed garlic, curry leaves and saute for 2 mins until the onion changes colour.. 






Add in the tomatoes,salt, turmeric powder,chicken masala powder,saute it for 3 to 5 mins until the tomatoes are fully cooked and oil gets separated at the edges..




Add in the whisked eggs , mix it well in high flame until it gets thick.. Cover and simmer it for 2 mins .. Garnish it with chopped fresh coriander leaves ..
