ARASANIKKAI PORIYAL 

Arasanikkai is also called as parangikkai in tamil ,yellow pumpkin in english.. it is really tasty and it is harvested in the month of january during pongal festival and on the day before that is sankranthi it is tradition in kongunadu regions to cook this vegetable .. those who harvest this vegetable will share it with their neighbours and its really great culture in our region i must say .. 

HEALTH BENEFITS OF ARASANIKKAI

Pumpkin has a range of fantastic health benefits, including being one of the best-known sources of beta-carotene.
Beta-carotene is a powerful antioxidant. It also gives orange vegetables and fruits their vibrant color. The body converts any ingested beta-carotene into vitamin A.
Consuming foods rich in beta-carotene may reduce the risk of developing certain types of cancer, offer protection against asthma and heart disease, and delay aging and body degeneration.
Many studies have suggested that eating more plant foods such as pumpkin decreases the risk of obesity and overall mortality. It can also help prevent diabetes and heart disease, and promote a healthy complexion and hair, increased energy, and a healthful body mass index (BMI).Pumpkins are also a powerful source of fiber.

INGREDIENTS

Arasanikkai - 500gm ( cut into large cubes)
Small onion - 100gm (cut into two halves )
Dry red chillies - 4 nos
Curry leaves - few
Turmeric powder - 1/2 tsp
Sambar powder - 2 tsp
Oil - 2 tbsp
Asafoetida (perungayam) - 1/2 tsp
Mustard seeds - 1/2 tsp
Sugar - 1 tsp
Salt - as required
Water - as required


METHOD

Place a kadai or a pan, (i have used claypot) on the stove , heat it, add oil, when hot enough add asafoetida and mustard,let them splutter. Add small onions, dry chilles and curry leaves and saute for 2 mins.. Add in the pumpkin cubes and saute it well ..




 Add turmeric powder, sambar powder, salt and water till the vegetable is immersed..cook it in high flame covered for about 10mins and after that open the lid and add sugar , mix it well and make sure the vegetable remains in shape as it tends to mashed up easily.. so mix very gently ..




Cook till the water is absorbed,stirring very gently and occasionally.. Thats it your arasanikkai poriyal is ready.. it is really simple to make and tastes awesome with curd rice and u can have it as it is .. The sugar we add gives  a sweet taste which makes this poriyal sweet and spicy which is highly liked by kids..
