KADAI VEGETABLE GRAVY

 KADAI VEGETABLE GRAVY

Kadai vegetable is a well known dish and most of us order it when we visit restaurants.. it can be made at home and it tastes the same as in the hotels..since we add lots of vegetables its highly nutritious and its made with minimal spices so its suitable for kids too..Mixed vegetables are cooked with freshly ground spices and then simmered in delicious tomato gravy.

INGREDIENTS

Mixed vegetables - 2 cups ( capsicum must (chop it as shown in the picture), other vegetables ur choice.. i used cauliflower,potato,sweet corn, carrot)
Big onions - 4 no ( chop 2 onion into cubes, other 2 onions chop it fine into small pieces)
Ginger garlic paste - 1 tbsp
Tomato - 5 nos large.. (grind it into a smooth puree)
Oil - 5 tbsp
Butter or Fresh cream - 2 tbsp
Turmeric powder - 1/4 tsp
Kashmiri chilly powder - 2 tsp
Salt - as required
Fresh coriander leaves - 2 tbsp chopped fine


FOR FRESH GROUND MASALA

Dry roast the following ingredients and grind into a fine powder.

Whole coriander seeds - 1 tbsp
Cumins - 1/2 tsp
Black pepper - 5 nos
Cashew nuts - 10
Red chillies - 4
Cinnamon - 1/2 inch piece
Clove - 2 
Green cardamom - 2 
Kasuri methi ( dried fenugreek leaves) - 1 tsp




 METHOD

In a kadai add 1 tbsp of oil, heat it on high flame, add the cubes of onion and capsicum, saute it for 2 mins and keep aside. it should remain crunchy ,dont overcook them.


In a kadai add the remaining amount of oil and add ginger garlic paste, saute it in medium flame for 2 mins till nice aroma comes,


Add chopped onions and saute it till the colour changes into golden brown


 ,add in the tomato puree , turmeric powder, kashmiri chilli powder, salt and mix it well. cook it closed and in high flame for about 10 mins so that the raw smell of tomato goes and it turns into thick consistency.. u can find the oil separating
 





  at this stage add the mixed vegetables (leave the tossed  onions and capsicum we will add it later ) ,2 cups of water and cook in medium flame for 10 mins. vegetables shouldnt get too mushy, they have to retain their shapes.



 
Add the ground masala, mix it well and simmer for another 5 mins


..
Add in the tossed onions and capsicum ,mix well, adjust salt and if the gravy is thick, add some more water and add 2 tbsp of fresh cream or butter and let it sit for 2 mins. Garnish it with fresh coriander leaves



 and thats it ur kadai vegetable is ready to serve.. it goes well with roti, naan , and puri.
