KAMBU PANIYARAM ( DARK MILLETS OR BAAJRA)

Millet is filled with nutrients. It contains around 15 % of protein and is rich in fiber. It is a rich source of Vitamin E, B complex, niacin, thiamin and riboflavin. In addition, millet also contains essential amino acids like methionine and lecithin and minerals like iron, magnesium, phosphorus and potassium.
Millet is also known as ‘Bajra’ in Hindi, ‘Sajjalu’ in Telugu, ‘Kambu’ in Tamil, ‘Bajri’ in Marathi, ‘Kambam’ in Malayalam, ‘Sajje’ in Kannada, and ‘Vari’ in Gujarati. Here are some of the benefits of millets and why they should be included in our diet.

Millets - siru dhaniyam in tamil was mostly used for cooking by our ancestors .. in-between it has  lost its charm and now again great awareness has been enlightened in this decade.. its health benefits are endless and now people are including  millets often in their diet.. kambu or dark millet or bajra is one among the millets which is rich in fibre and iron.. we will see how to make a super tasty snack paniyaram (appam) with it..

INGREDIENTS

Kambu - 2 cups
Idli rice or boiled rice - 1 cup
Urad dal - 1/2 cup 
Take all the ingredients in a bowl, wash it thoroughly and soak it in water..
i usually soak it overnight but you have to soak all these ingredients in water  for minimum 4 hours. grind it in mixie or a grinder to idli batter consistency ..








Let it ferment for 6 to 8 hours.. the batter should have the sour taste thats when you get the perfect flavor and taste..

At the time of making paniyaram , take 100g of small onions, 1tsp cumin seeds and few curry leaves,grind it into a coarse paste and mix it in the batter.. add some water to make the batter to a flowing consistency ..




Place a paniyaram pan on the stove, let it get heated, add 1/2 tsp oil in each hole, and now fill the batter in the hole only to 3/4 th as the paniyaram will rise .. let it cook for 2 mins, flip all the paniyarams and cook in medium flame for another 3 to 4 minutes , flipping occasionally.. 






thats it ur tasty healthy kambu paniyaram is ready.. its a perfect evening snack for the kids .. serve it hot with coconut chutney and tomato chutney.. U can add finely chopped onions, green chillies, coriander leaves, thinly sliced coconut pieces also to the batter before making paniyaram.. for that u don't even need a chutney u can have as it is ..




Using the same batter u can make dosa also in a tawa.. just be sure that it is well cooked on both sides and u have to do it in medium flame as it will get burnt in the centre easily..
