EASY POTATO MASAL FOR PURI

Potato masal can be done in various methods .. this recipe i am sharing here is very simple and we can prepare it in few minutes.. it is a dry masal and you can very well pack it for traveling, since we dont add water it has more self life.. this masal can be used as a stuffing in urulai kizhangu bonda also.. in chappathi rolls we can use this masala as the stuffing..This masal tastes very nice if you manage to get the fresh ooty grown potaoes.. Generally we use big onions for preparing puri masal amd korma but i have used small onions to give a variation and trust me it tastes divine .. this masal can be used as a side dish to rasam rice and curd rice and even sambar rice.

INGREDIENTS

Potatoes - 500 gm
Small onions - 200 gm ( i always use onions more in every recipe if you like to use less onions its absolutely your choice)
Green chillies - 5 nos ( chopped fine )( refer the picture )
Ginger garlic paste - 1tbsp
Oil - 3 tbsp
Mustard seeds - 1/2 tsp
Asafoetida (perungayam) - 1/2 tsp
Channa dal ( kadalai paruppu) - 1tbsp
Curry leaves - few
Coriander leaves - a hand ful chopped
Salt - as required




METHOD

Cook the potatoes in a pressure cooker for 5 whistles, peel of the skin and mash it .. it shouldnt be too mushy ,have to remain dry so try not to over cook..hope you all know that you can use a fork to mash the potatoes easily ..  
Place a kadai on the stove , heat it , add oil and let it get heated.. Add asafoetida, mustard seeds and channa dal .. let them splutter and make sure channa dal dont get burnt it have to be in golden brown colour. 



Add ginger garlic paste, saute it for 1 min in medium flame, when raw smell goes, add small onions, green chillies and curry leaves .. saute it for 2 mins .when the onion changes it colour, add turmeric powder and salt to the mixture, mix it well..



  
 
Add the mashed potatoes and mix it well so that all gets blended well.. since we dont add water make sure that salt is mixed evenly. close the kadai with a lid and simmer the stove for 5 mins stirring occasionally..




Garnish it with fresh coriander leaves and serve it hot with puri ..its a superb lunch box recipe , my son loves it .. Thats it your easy potato masal is ready to serve.
