VEG BRIYANI IN PRESSURE COOKER

Hello everyone.. today i am going to share a very simple but very tasty recipe.. veg briyani in a pressure cooker.. apart from preparing the masala and chopping veggies we can do it within 30 mins.. perfect lunch box recipe for kids with full of nutrients.The choice of vegetables is absolutely yours but make sure to add carrot, beans and green peas..if you are making it as a lunch box item for your kid in the morning, better make ready the vegetables the previous night and it will really save your time in the morning.. we can use basmati rice, jeeraha sambha or even normal boiled rice .. i have used basmati rice today.

INGREDIENTS

Basmati rice or rice of your choice - 2 cups ( soak in water for minimum 30 mins)
Mixed vegetables - 250gm ( carrot, beans, green peas, cauliflower, turnip,chow chow etc)
Big onion - 1 large ( thinly sliced)
Tomatoes - 4 large ( chopped )( 1 cup rice = 2 tomatoes )
Green chilles - 2 ( sliced into 2 halves)
Mint leaves - 1/2 cup
Coriander leaves - 1/2 cup chopped
Turmeric powder - 1/2 tsp
Salt - as required
Water - 3 cups ( basmati rice 1 cup = 1.5 cup of water
Zeera samba rice 1 cup = 2 cups of water 
Normal boiled ponni rice 1 cup = 3 cups of water )









 

 FOR GRINDING

Garlic - 20 pods
Ginger - 2 inch piece
Cinnamon - 2 ( 2 inch sticks)
Cloves - 3 
 Green cardamom - 3 
Dry red chillies - 5 nos ( you can use more if you like it spicy)
Grind all these ingredients into a smooth paste..Add very little water if required to grind.



 

 FOR TAMPERING (THALIKKA)

Cooking oil - 50 ml
Ghee - 2 tbsp
Cashew nuts - 2 tbsp
Briyani spices -  assorted ( refer picture below)


METHOD

Place a pressure pan or cooker on the stove, heat it ,add oil and ghee. Let it get heated to a medium level, add cashew nuts and briyani spices..note that if the oil and ghee mixture is too heated the spices and cashewnuts will get burnt..saute for 30 secs ,you will get the wonderful aroma of the spices, add in the onions and green chilles, saute it for 1 min till onion gets golden brown colour, add the chopped tomatoes and cook it until it turns soft and mushy.. cover and cook so that tomatoes get cooked easily..








  When the tomatoes are cooked fully add in the freshly ground masala and saute it for 5 mins in medium flame till the oil gets separated in the edges. Add mint and coriander leaves, saute it for 1 min and add the vegetables, mix it well, add turmeric powder and salt and saute it for 2 mins in medium flame.









 

Since i have used 2 cups of basmati rice , i have added 3 cups of water .. refer the rice water ratio in the ingredients section above.. Add water and bring it to boil, check and adjust salt, add the soaked rice and mix it well.. stir it occasionally for 3 to 4 mins and you can see the mixture thickens, now close the lid and cook for 2 whistles in high flame and simmer for 2 mins and switch off the stove .. if you are using boiled ponni rice cook it for 3 whistles and simmer for 4 to 5 mins.








 Allow the steam to get released, open the lid and gently mix and fluff the rice with a wooden spoon..transfer the content to a serving bowl and serve it hot with onion raitha.. thats it your veg briyani is ready to eat..
