Easy Chicken Briyani 

Chicken Briyani is cooked in many ways through out India like hyderabadi briyani,mughal briyani, dum briyani etc.. this recipe I share here is very simple and cooked with a pressure cooker.. it is less time consuming and you can very well make it with in one hour provided that you have the onions and garlic peeled before..you can use either basmati rice or Zeera samba rice and i prefer zeera samba rice for its mindblowing aroma.I have used country chicken ( naatu kozhi) and you can cook with the broiler chicken too..

Ingredients

 


Chicken - 1/2 kg
Zeera samba rice - 2 cups ( 1 cup = 225g)( soak it in water for 1/2 an hour )


FOR GRINDING 

 


I have prepared a bit spicy as we all like it that way and you can make it less spicy also .. 
 Dry red chilles - 10 nos
Garlic - 50g
Ginger - 50g
Small onions (shallots or sambar onion)- 15 nos
Cinnamon(pattai)- 10g( roughly 8 -1inch pieces)
Clove(kirambu)- 8nos
Elaichi-5nos
 Add all these ingredients into a mixer grinder and make it a course paste.


 For tampering


Bay leaves- 3nos
Star anise- 3nos
marathi mokku-3nos
Elaichi-5nos
clove-5nos
kal pasi-2 pinches
rose petals-5g
maze- 2 pinches ( you will get all these things in a single packet as "Briyanai saaman" or else you can buy them separately in a super market)
Cashews-10g
Oil - 50 ml ( i have used ground nut oil you can use sun flower oil too)
Ghee - 4 tbsp
Big onion- 1 large no(thinly sliced)
Green chilles-2nos(slit into two halves)


Tomato- 4 medium sized ( use naatu thakkali it will enhance the taste)



Turmeric powder- 1/4 tsp
Salt- as required 
Mint leaves- one hand full
Coriander leaves- one hand full
Water- 4 cups (use the same cup you use to measure rice) 




Place a cooker pan on the stove and once it is hot enough pour oil and ghee into it.Make sure it doesnt get heated too much and add in the ingredients mentioned in "for tampering"



Once a nice aroma satrts coming add in the thinly sliced onions and green chilles.


Give it a good stir and once the onions turns golden brown add in the tomatoes.


Cover and cook it for 2-3 minutes or until the tomatoes gets mushy..Add in the course ground paste and mix it well.


Stir it continuosly as it will get burnt easily.. do this till the oil separates, it will take around 5 minutes.


You can see the oil in the sides of the pan and now add in the chicken, turmeric powder and salt (add only for the chicken ).



 Mix it well and stir for 2 mins.Add in mint and coriander leaves and give it a good mix.



Add 2 cups of water and close the lid of the pan and let it cook for 4 whistles.Allow the steam to release by itself.




Once the steam is released fully, open the lid and add in the remaining two cups of water.. 

Adjust salt and once the mix comes to boil add in the soaked rice and mix it well.


Stir it occassionally until it gets thickened, this will take around 5 to 10  minutes and  make sure that it doesnt get burnt in the bottom.


once u get the required consistency close the lid,put on the weight and simmer it for 10 mins.


After 10 mins turn off the stove and wait till the steam releases by itself and slowly open the lid.



Mix it gently with a spoon and transfer it into a serving bowl.. Your chicken briyani is ready to eat.. Serve it with onion raitha.
