HOTEL STYLE POTATO MASALA
Puri masal is an all time favourite dish for all of us.. Potato masal is made in different styles, the one we get in the restaurants is slightly a different version from the one we make at home.. If you have tasted puri masal at Annapoorna restaurant coimbatore, you will find the masal served there will be very tasty but just a slight variation from what we make at home.. they add fresh green peas which gives a different aroma to the masal..I have tried some three four combinations to get that flavour right.. the end result is the one I am posting here .. Refer easy potato masala here .. The main thing to be noted in making the potato masal is choosing the potatoes right.. it would taste better if its grown in red soil rather than clay or black soil..Remember when buying potatoes make sure its coated in red soil .. it gives the original taste to potatoes..
INGREDIENTS
Potato - 750 gm ( boiled, peeled and mashed)(serves 5 to 7 adults)
Big onions - 500gm ( thinly sliced)
Tomato - 3 large ( finely chopped)
Fresh green peas - 100gm
Green chillies - 8 nos ( slit into two halves )
Dry red chillies - 3 nos
Ginger garlic paste - 1.5 tbsp
Curry leaves - few
Fresh coriander leaves - 3 tbsp (chopped)
Mustard seeds - 1 tsp
Channa dal - 1 tbsp
Oil - 4 tbsp
Asafoetida - 1/4 tsp
Turmeric powder - 1 tsp
Salt - as required
Water - as required
METHOD
Heat a pan or kadai on the stove ( I have used claypot) , add oil ,let it get heated, add asafoetida, mustard seeds and channa dal .. let mustard splutter, in medium flame saute for 30 seconds till channa dal turns golden brown..Add in the ginger garlic paste and saute it for 2 mins until raw smell goes in medium flame.. caution to be taken ginger garlic paste shouldnt be burnt as its the key ingredient to give the desired flavour..
Add in the sliced onions,green chillies, red chillies and curry leaves and saute for 5 to 7 mins stirring inbetween..when the onion gets translucent,add in the fresh green peas and chopped tomatoes and mix well..
Add turmeric powder and salt and cover and cook for 5 mins in medium flame so that the green peas and tomatoes get cooked..stir in between as it may get burnt in the bottom..
Thats it your hotel style potato masal is ready to serve .. serve it hot with puri or chappathi...
