PURI NOODLES

Puri noodles is an easy snack which can be made with left over puris or chappathies .. In a joint family like mine it is always tough to cook food very precisely which means left overs are always possible.. To make a new recipe from leftovers, gives an immense pleasure that we are not wasting food.. If it turns out to be a tasty snack then your kids will also be happy with you.. We are adding vegetables also which is like cherry on the cake.. You can use this same recipe to prepare puri noodles with freshly prepared puri or chappathi too if you are planning this for lunch box..

 INGREDIENTS

Left over puri - 10 nos (refer picture to cut it like thin strips)
Big onions - 2 nos (thinly sliced)
Tomato - 2 (thinly sliced)
Capsicum - 1 (thinly sliced)
Green chillies - 4 nos (slit it into 2 halves)
Curry leaves - few
Spring onions - 4 tbsp (finely chopped)
Turmeric powder - 1/4 tsp
Red chilly powder - 1 tsp
Garam masala - 1 tsp
Fennel seeds (sombu) - 2 tsp
Oil - 3 tbsp
Salt - as required 

Take 3 to 4 puris and roll them and then cut them into thin strips as shown below






 METHOD

Heat a kadai or pan on the stove, add oil , heat it , add fennel seeds and let it splutter, add thinly sliced onions, green chillies , curry leaves and saute for 2 to 3 mins till onion turns golden brown.. 
 



Add in the thinly sliced tomatoes, salt and saute till the tomatoes are cooked fully turning mushy and soft..Add in the thinly sliced capsicum , turmeric powder, red chilly powder, garam masala powder and saute it for 2 mins..








Add in the thin strips of puri , stir it well so that all the masalas and puri gets mixed fully. cover and simmer it for 3 mins. Garnish it with finely chopped spring onions..






Thats it your puri noodles is ready to eat .. you can serve it with onion raitha or just eat as it is.. hope you all are going to try this very simple and quick snack and pleasantly surprise your family memebers.. Until next post, Veni here signing off.. Happy cooking !!!
