MEDHU VADAI - URAD DAL VADAI
Medhu vadai is a snack which is mostly loved by every one.. we used to order it whenever we go to the restaurants.. its very famous in coimbatore Annapoorna and Chennai Saravana bhavan hotels.. it can be made easily at home with the same taste and texture ..with this same recipe we can prepare, sambar vadai, curd vadai too. will post their recipes in coming days.I learnt this recipe from a neighbor when i lived in coimbatore.. I also thought that we cant get the shape right with the hole in center but she taught me so nicely that now my vadai is very famous in our family.. my aunt always asks venima how do you get the hole right in the center of the vadai .. follow the method and surprise your family members also..
INGREDIENTS
Urad dal ( ulundhu) - 2 cups ( soaked for 1 hour )
Crushed pepper - 2 tbsp
Green chillies - 4 ( finely chopped)
Curry leaves - few
Salt - as required
Oil - as required for deep frying
METHOD
You can grind the urad dal in the mixie that way you can grind it with minimum amount of water.. your batter should be really thick only then less oil will be absorbed..
To the batter add , crushed black pepper, curry leaves, finely chopped green chillies , salt and mix well..
Heat oil in a kadai for deep frying the vadas .. For getting the right shape , wet your hand fully, take a small ball of batter with your fingers, now dip your thumb again in water and make a hole at the centre of the batter and drop the vada in the oil..
Sorry for the picture quality as i was taking the picture with my left hand.. Wait for the first vada to raise then u can drop the next one so that the vadas will not get sticked to each other. Gently flip it over after 2 mins .. flame should be in medium , not too high..
Flip it again after 2 mins , you can see a delightful golden brown colour in your vadas and now you can take the vadas out from the oil..
Thats it your medhu vadai is ready to eat.. it can be served with idli or ven pongal during breakfast.. we can have it as a snack also in evenings ..
