POTATO FRY
This is one of my son's favourite lunch box recipe.. every kid loves potato and it is a good source of carbohydrate which keep our children going in school..very very easy to make with minimum ingredients and really mouth watering.. it goes well with sambar rice and curd rice..
INGREDIENTS
Potatoes - 1/2 kg (peel the skin off and chop them evenly as shown below)
Oil - 3 tbsp
curry leaves - 2 strips
Turmeric powder - 1/2 tsp
Red Chilly powder - 1 tsp
mustard seeds - 1/2 tsp
Hing (perungayam)- 1/2 tsp
salt - as required
METHOD
In a kadai, add oil and heat it.Add hing and mustard seeds let it splutter, add curry leaves and saute it.Add in the chopped potatoes, turmeric powder,chilli powder, salt and mix it well. Close it with a lid.. NO NEED TO ADD WATER. just simmer the stove and let it cook for 7 to 10 mins.stir it occassionally and your potato fry is ready to eat..
