SIMPLE BUTTER COOKIES

Baking is one form of cooking which most of us is not aware and we opt for the simplest way that is just step into a bakery to get the goodies..i was also doing the same thing still does but i learnt baking when i lived in chennai.. The credit goes to my bestie vani who literally dragged me to attend the class.. but i cant thank her enough as only because of her i attended the classes conducted by Rajamani aunty (she used to do the cookery shows in sun tv).. it was very useful and i still remember the day when i first baked a vanilla sponge cake ..my husband was in complete awwe..today i like to share the recipe of simple butter cookies ..as the name implies it's very easy to make, very very delicious just melt in your mouth. I give credit to Srimathi.Rajamani aunty who taught me this recipe ....
First of all let me explain some important things in baking.
* Always buy unsalted butter( cooking butter),we usually get confused with pasteurised butter, table butter etc.
* We can use castor sugar instead of normal sugar if its available but no need to grind the castor sugar into powder unlike the normal sugar. 
* The most important and must needed thing is the electrical beater ... Its the only investment we have to make before we start baking becoz it gives u the desirable result in ur recipes.

 INGREDIENTS

  * Cooking butter ( unsalted) - 100 gm
* Maida ( all purpose flour) - 150 gm
* Sugar ( grind it into powder) - 50 gm 
* Vanilla essence- 1 tsp

This is the basic measurement u can calculate if u are using large amount.. today i have baked in a bulk and i used 500gm butter, 750gm maida, 250gm sugar,5tsp vanilla essence.. the measurement goes like this..

METHOD

  Take a bowl and add butter and sugar to it and beat it for around 5 to 10 mins till the mixture become light and fluffy..





* Add the vanilla essence and blend it well.
* Now add maida and knead it together into a soft dough with your hands.
* Let the dough sit for 10 minutes. 


  At this stage if u like to do some choco cookies .take the required portion of dough ,add cocoa powder (quantity of cocoa powder depends on you ,u can add more or less )and knead it well till the dough and cocoa powder blends well..



 If u r planning to use a cookie cutter keep the dough in the fridge for 15 mins and then with the help of flour roll it like a roti and then u can cut into different shapes


   Easy way is just take gooseberry size dough, make it into nice round and then just press it holding between the two palms of ur hands..




Butter scotch


U can give small variations by adding chocochips, cashews, butter scotch, badam , etc..Arrange the cookies in baking tray and gently flatten it with a fork.. 


Meanwhile preheat the oven to 200•c 
* Now bake the cookies in 200•c for 12 to 15 minutes. The time depends on each oven.u will learn it with experience. Thats it ur crispy, tasty butter cookies are ready.
