Channa Masala or Chole masala

Channa masala is a popular north indian side dish which goes very well with chola puri, puri, chappathi, roti etc.. It is a tomato based gravy and we add little sugar to give it a sweet taste which is very much liked by children.It can be prepared with black or white channa (sundal) but white channa tastes better.Channa is rich in proteins so its healthy as well.Channa masala is prepared in various types in different parts of India, this recipe which we are going to see today has a south indian touch which makes this masala suitable to dosa, idli also..

Ingredients

White channa (vellai sundal) - 200g (soaked in water for 6 to 8 hours or overnight)
Potato - 500g (peel the skin off)
Chilli powder - 2 tsp
Channa masala powder (any brand) - 2 tsp
Salt - as required
Sugar - 1 tsp
Water - as required
Oil - 3 tbsp
Ghee - 3 tbsp
Butter - 2 tbsp (for seasoning)




For grinding 

Tomato - 5 Nos ( grind it separately without lumps)


Big onions - 4 Nos 
Garlic - 10 pods
Ginger - 2 inch piece
Cinnamon - 2 (2 inch piece)
Cloves - 4
Elaichi - 4 

Grind  all these ingredients separately into a fine paste.


 For tampering

Hing(perungayam) - 1/2 tsp
Cumin (seerakam)- 1 tsp
Green chillies - 2 (slit into two halves)

METHOD

Cook both channa and potatoes in the same pressure pan or cooker for 7 to 8 whistles.Mash the boiled potatoes and keep the channa whole.



I have used clay pot for this dish.. u can do it in any kadai or pan.Place the utensil on the stove and pour in the oil and ghee. once it is heated add hing,cumin and green chillies..Let them splutter ,you will get a nice aroma of hing and cumin.



Add the onion paste and saute until the colour changes into brown and oil separates.



Add the tomato puree, chilli powder, channa masala powder, salt, sugar and 1/4 cup of water.. saute it until the raw smell of tomato goes and be careful as this mixture tends to splash everywhere.. cover and cook and stir occasinally without it getting burnt at the bottom.It will take around 5 to 10 mins.



Once the raw smell goes and u get a nice aroma add in the boiled channa and mashed potatoes with 1/2 cup of water. Make it to a gravy consistency. Adjust salt and if u want this dish to be more sweet u can add more sugar to your taste.Let it cook for 5 mins in medium flame.




Turn off the stove and season it with butter( u can use fresh cream also) and let it sit for another 5 mins covered.




Thats it ur channa masala is ready to serve.. today i made puri..but it suits roti, dosa, chappathi too..
